Custard Slices
Welcome back to our weekly Dish of the Week series. There are so many recipes we want to share with you after our 3-week camping holiday (especially that Christmas meal), but in today’s post we are going to show you how to make one of my all-time favourites – custard slices!
It’s actually a birthday treat that my mother used to bake for me on special birthdays. The first time was when I turned 13 and I don’t remember ever eating anything so good! On my 21st birthday, my mum baked it again and it was easily the most popular dessert on the table. When I celebrated my birthday last week (my 13th and 21st birthdays now long forgotten), I asked my mum to help me bake custard slices again. And it is, after all these years, still one of my favourites!
Put it on the table:
It’s actually very easy to make and if you like custard, this will soon become one of your favourites too!

Ingredients for Custard Slices
1 packet (200g) Cream Crackers
1 liter full cream milk
250ml sugar
120ml butter/margarine
120ml all-purpose flour
100ml corn flour
10ml custard powder
2ml salt
100ml cold water
3 eggs, separated
5ml vanilla essence
Heat the milk in a large saucepan until boiling. Add the sugar and butter and stir until melted, then remove from the heat.

Mix the cake flour, corn flour, custard powder, salt and cold water thoroughly in a mixing bowl.

Separate the eggs and add the yolks to the flour mixture and beat well. Gradually whisk a little of the milk mixture into the custard mixture.

Pour the mixture back into the saucepan with the rest of the milk. Stir constantly over low heat and cook for about 5 minutes until thick. Remove from the stove and stir in the vanilla essence.

Beat the egg whites until soft peaks form. Gently fold the egg whites into the custard mixture with a metal spoon.

Put a layer of cream crackers in the bottom of the bowl, spoon the custard mixture on top and put another layer of cream crackers on top. Let the custard slices cool down.
Tip: Pack the crackers on top in such a way that their center lines lie in the same direction.

TOP LAYER:
While you wait for the custard slices to cool down, get the ingredients ready for the top layer.

500ml icing sugar (sifted)
40ml hot water
2 tablespoons lemon juice
Sift the icing sugar and mix with the water and lemon juice to a smooth paste. Spoon it onto the custard slices.

Place the custard slices in the refrigerator and chill for a few hours. Slice and serve.

Maybe (like me) you don’t have to wait 32 years for another birthday before making custard slices again … it’s way too good to wait that long!

These slices are one of our family’s favourites as well. In Australia they are called Vanilla Slices. We use Arnott’s Lattice biscuits. Don’t think we have cream crackers here like you do. Professional bakers make them all over Australia. There’s even a competition for the best Vanilla Slices each year. Their website is – thegreataustralianvanillaslicetriumphmerbein.com

I read that Cream Crackers had their origin in Ireland (it’s certainly very popular in South Africa). I googled Arnott’s Lattice biscuits and they look a lot like Cream Crackers – so I can understand why they are used in your Vanilla Slices. It seems to me, if I ever come to Australia, I will have to go to Banana Boogie Bakery because they were the 2024 winners of that Vanilla Slice competition 😄. Carl, there is definitely a similarity between Custard Slices and Pastéis de Nata (especially with the custard filling), but the Cream Crackers and icing sugar on top give it a different taste … both are equally delicious though 😋.

This looks delicious, Corna. I think I’ve asked you this before, but is custard powder a thickening agent? I haven’t seen it here in the states, but there are alternatives, like arrowroot and cornstarch. And, Happy Birthday! My birthday was last week as well. 😊

I think you may have asked before (or maybe not 😉), but you’re right, custard powder is a thickener … which is also delicious. It’s also perfect for drizzling over your favourite pudding. Oh yes, happy birthday Tricia (mine was on the 10th) 🎉.

What a brilliant idea. Do you know where it comes from? Custard is a wonderful thing but done this way sounds even better. I used to love cream crackers but haven’t had them for years. I know if I did this I would forget to line them up to match!

It seems that custard slices originated from the UK (or perhaps Ireland). There are so many variations of this – vanilla slices for example are almost the same, but it’s an Australian delicacy. I really like custard and that’s probably why I like this so much. Haha 😅, I had to remind myself a couple of times to place the cream crackers’ lines all in the same direction … I don’t think it matters that much though (unless you’re a perfectionist – which I’m not)!

Thanks Maggie! Oh yes, I love pastéis de nata – I remember it’s not quite your favourite 😉. But I really like everything custard (but then it has to be homemade custard and not the ones you buy ready-made in boxes).

Delicious! Custard slices are one of my favourite cakes but I’ve never tried making one yet. I’ll definitely have to arrange a trip over to SA as your country seems to have all my favourites!

Well Marion, as you can see, it’s actually quite easy to make! I think here in South Africa there are many dishes that are also well known in the UK, so when you visit SA, you will definitely find many of your favourites in restaurants and coffee shops 😊.

At least that’s something that has remained the same over the years – the delicious taste of custard slices. Looking at photos, I’ve changed quite a bit from 13➡️21➡️53 😄.
