Bernita’s famous Potato Salad
I’m sure that almost everybody can make potato salad – there are probably a hundred or more versions of this delicious salad.
However, today’s “Dish of the Week” post has a twist – it’s not necessarily about how to prepare a potato salad, but rather about the person who used to make it.
Bernita was not only a colleague of mine, but also a good friend. We had wonderful times together – whether it was at work, a function, camping, a braai or just a quick chat (which, by the way, was never quick). Whatever the occasion, the request was always the same: “Bernita, will you please make your famous potato salad?”

Our group of friends held a Christmas dinner every year – a get together before everyone went on holiday. This photo was taken on such an occasion – Bernita is sitting on the far right of the photo.
However, in 2020, Bernita passed away suddenly. It’s been four years now, but when our group of friends get together and someone makes a potato salad, we still talk about Bernita and how much we miss her.
Whenever I asked Bernita for the recipe of her potato salad, she always said there was nothing special about it – “Don’t forget the condensed milk and use the best mayonnaise” – and according to her there was no better mayonnaise than Crosse & Blackwell Tangy Mayonnaise.
Tribute to Bernita:
Here is my version of Bernita’s potato salad – of course it doesn’t taste as good as hers – but while I’m making it, it’s always a special time to think about her and the good times we had together.

Ingredients for Bernita’s famous Potato Salad
6 potatoes, peeled and chopped
2 eggs
½ onion, finely chopped
1½ cup mayonnaise (Crosse & Blackwell Tangy, that is)
½ cup condensed milk
50ml milk
salt & pepper, to taste
Many people I know put the whole potatoes (with the skin) in the water to cook and then peel and chop them. But I peel and chop my potatoes beforehand. I then add these to cold water and cook for about 20 minutes. Remember, they shouldn’t be too soft that they break up.

Cook potatoes in cold water for 20 minutes until soft
While the potatoes are cooking, place the two eggs in a separate saucepan and cook for 8-9 minutes. When the eggs are cooked, let it cool down and peel and chop them finely. Set one of the egg yolks aside (this will be the garnish).

Finely chop the onion and set aside. When the potatoes are soft, drain well and let them cool completely.

Drain cooked potatoes and cool
While you wait for the potatoes to cool, mix the mayonnaise, condensed milk and milk together in a small glass bowl.

When the potatoes have cooled, put it in a mixing bowl and add the chopped onion, eggs and salt and pepper.

Add chopped onion, eggs and salt and pepper to cooled potatoes
Pour in the mayonnaise mixture to the potatoes and stir gently until combined.

Spoon the potato salad into a serving bowl. Crumble the boiled egg yolk that you kept aside and sprinkle it on top of the salad. This salad is best served chilled.

Berto prefers a sprinkle of cayenne pepper on top of his salad, while I like mine à la original.


It may look different, but it’s still the same delicious taste
Even though Bernita is no longer with us, we will always remember her infectious laugh, her loyalty and love for her family and friends and her kind heart.

Hi Corna. Unfortunately I have something disappointing to tell you. We’re changing our plans big time now and we’re not heading to SA after all. So sorry, you’ll see why in a later post. Disappointed because I was really looking forward to Cape Town and excited about meeting you guys. BUT…part of the reason is that we’ve decided to allocate more time to South Africa and come back maybe next year so watch this space! Anyway, sorry to change plans, we will meet one day soon!

Oh, that’s bad news! We are obviously very disappointed, but I also think it might be wise to want to spend more time in South Africa. Well, we’re not going anywhere soon, so we’ll be here when you finally arrive in Cape Town.

Potato salad with condensed milk sounds really nice and how lovely the salad evokes fond memories of your friend who looked so nice!

The condensed milk gives the salad a slightly sweet taste, but one must be careful not to use too much, otherwise it may be too sweet. The best would be to first just pour in a little to the mayonnaise, mix and taste and then add a little more until the taste is just right. You’re right Marion, Bernita was a beautiful woman – inside and out.

Sorry for the loss of your friend. We love potato salad in the summer. I would never have thought to put condensed milk in it! Maybe I’ll try it.

Thanks for your thoughts Maggy. It turns out that condensed milk in potato salad is a typical South African thing. I’ve eaten this salad often without condensed milk and it’s just as delicious … until I tasted Bernita’s salad and I have to admit, the condensed milk puts it in its own league!

Thanks Hannah. You’re 100% right … Bernita was definitely the life and soul of a party and always wanted to make sure everyone else had a good time too. Her knowledge of music was amazing and I remember how many times we sang together until late at night!

I’m sorry to hear about your friend Bernita passing away. It’s lovely that whenever you get together with your group of friends, someone makes this potato salad. I would never have thought to try to make potato salad with condensed milk. I’m curious to try it.

Thank you Linda, she is greatly missed … I can’t even begin to imagine how hard it must be for her husband and lovely twin girls. Not an opportunity goes by when our group of friends are together and someone doesn’t make Bernita’s potato salad – her legacy lives on! I think once you’ve tasted potato salad with condensed milk, you won’t go back to the traditional way.

How sad to lose such a good friend. I’m sure she would be touched to be remembered so fondly. Her recipe sounds so good. I have never heard of anyone using condensed milk in potato salad before but why not? My mother seldom used recipes and didn’t measure things precisely. It was always a bit of this and a bit of that. Some people are natural cooks. I suspect you and Berto are too. One thing is for sure, no one will ever remember me by a recipe!

Bernita was one of those people who always saw the goodness in others – a pleasure to be around. Fortunately her legacy lives on in her twin girls. I also never knew condensed milk could be used in a potato salad until I got to know Bernita and figured out how delicious it was! I think Berto is the natural cook – he’s like your mother (a little bit of this and a little bit of that) while I work more on precise measurements when I’m baking or cooking. Ha, you may not be remembered for recipes, but no one can doubt your caring heart for animals. When I see a cat, I always think of you – and that’s at least once a day!

Corna, wat ñ pragtige manier om ñ vriendskap te vier, selfs al is sy reeds 4 jaar weg. My ma se resep is dieselfde as hierdie een, net die byvoeg van die melk is anders. O, en ek braai ñ pakkie baconstukkies en voeg dit ook by as dit afgekoel is. So goed soos ñ volledige maal.

As daar een ding is wat Bernita se ontydige dood my laat besef het, is dit dat ons ons ander vriendskappe moet koester … tyd is net aan ons geleen. Wanneer ek ‘n warm aartappelslaai maak, los ek die kondensmelk uit en vervang dit met Mrs Balls chutney en gebraaide bacon stukkies. Soos jy sê, ‘n volledige maal!

It’s a lovely post, Corna, and a beautiful tribute to your dear friend. The condensed milk must be the secret ingredient. I’ve never really heard of anyone using it in potato salad recipies.

Bernita was always laughing and one could never have been depressed in her company – we need more such friends in our lives, isn’t that so? As for her potato salad … it has a special place in my recipe book.
