When we camp, we always make breakfast after taking an early morning walk. Usually we are then a bit tired and lazy to make a decent breakfast.

That’s why this time, we already prepared most of our breakfast at home. All we had to do at our camp site at Yellow Sands was heat up the Sloppy Joe and bake an egg and voila … a hearty breakfast! (You can read about our camp weekend at Yellow Sands here).

Put it on the table:

There are quite a few ingredients in our Sloppy Joe recipe, but once you got everything out of the pantry, it’s quick to make.

Ingredients

500g ground beef

½ onion (or 1 small onion), diced

5 cloves garlic, chopped

1 large green pepper, diced

1½ cups tomato sauce (ketchup)

1 tablespoon mustard sauce

2 tablespoon brown sugar

1 cup water

1 teaspoon crushed chillies

salt & pepper (to taste)

Worcestershire sauce (to taste)

2 tablespoons tomato paste (optional)

Tabasco sauce (optional, to taste)

Chopped garlic, onion and green pepper

Heat a little oil in a Dutch oven and add the ground beef. Cook it until it turns brown. Add the onion, green pepper and garlic and cook for a few minutes until the vegetables begin to soften.

Add the veggies and cook until soft

Add the tomato sauce, mustard, brown sugar, water and crushed chillies. Also add the tomato paste, Worcestershire and Tabasco if desired. Taste and adjust the seasonings as needed. Stir to combine and simmer for 15 minutes.

After it cooled, we scooped it into a container and placed it in our camping fridge.

After a lovely walk along the sea and river we heated up the Sloppy Joe mixture in a small saucepan.

And if you don’t have a toaster when camping, you simply toast the fresh bread rolls in a little butter in a cast iron pan on the gas stove.

Spoon the Sloppy Joe mixture over the rolls. If you want to go the whole nine yards, top it with a cooked egg.

While we were enjoying our breakfast, a few hadedas came to stand near our tent – probably hoping for some leftovers. However, all that was left on our plates were a few bread crumbs … it was THAT good!
