Delicious chicken and potatoes in the oven
It’s no secret that we love chicken dishes – we enjoy these at least once a week. And when we feel like chicken and vegetables with a delicious sauce, there’s always this recipe that Berto likes to make.
Put it on the table:
Here are the ingredients for this recipe (and make enough for the next day too, because you’ll love it).

Ingredients for the chicken dish
6 chicken thighs
2 onions, chopped
2 potatoes, cut into large pieces (we love potatoes, so we added 2 more)
2 carrots, cut into thick rings
4 cloves of garlic, chopped
bunch of fresh parsley, chopped
salt & pepper
2 teaspoons dried oregano
2 teaspoons sweet paprika
The sauce:
100ml sweet chilli sauce
30ml soy sauce
3 tablespoons honey
3 tablespoons Dijon mustard
juice of ½ lemon

Sauce ingredients (we swapped the bottle of lemon juice for a fresh lemon)
Season the chicken thighs with salt, pepper, oregano and sweet paprika. Flip them over and repeat on the other side. Massage the spices well into the chicken – it should cover the whole piece.

Heat a little oil and butter together in a pot on the stove and fry the chicken over medium heat until golden brown (about 5 – 7 minutes on each side). Transfer the chicken to a plate.

Now, fry the chopped onion in the same oil. After a few minutes, add the carrots and fry them together for about 5 minutes.


Time for the onions and carrots
Finally, add the potato pieces, garlic and parsley. Also add a little water and put the lid on so that the potatoes can steam slightly.

Add the last few ingredients
While the vegetables cook a little softer, you can make the sauce. And it’s very easy – just add all the sauce ingredients in a pot, stir well and cook for about 5 minutes.

Now it’s time to put everything together. We used our *‘braaibak’ once again. Put the veggies in first and then add the chicken pieces on top. Finish it off with the sauce. Place it (uncovered) in the oven for 40 minutes at 180°C / 360°F.
- Note: A ‘braaibak’ is a ‘casserole’ we use when we ‘braai’/barbecue. This ‘bak’ is quite large and can go either outside on the fire or in the oven – a very handy kitchen item.

Ready for the oven
And if you fancy more vegetables, why not steam broccoli and make your own cheese sauce. It works well with this chicken dish.

Nee, dit het nog nooit aangebrand nie (en ons het dit al baie gemaak). Nie in die pot op die stoofplaat nie (dalk omdat ons ‘n bietjie water bygevoeg het om die aartappels sagter te laat kook), maar ook nie in die oond nie. Kan wees omdat die oond nie so hoog gestel is nie en ook omdat dit net 40 minute gebak word.

How I’m enjoying your recipes Corna. I cook chicken every week too and often buy chicken thighs for winter curries etc. I’m definitely going to create this recipe as I have all the cupboard ingredients at hand and your instructions are so easy for me to follow on my iPad. I think you can be the new Delia Smith / Mary Berry celebrity chef!

Oh yes, chicken thighs are the best for curries! You’ll notice that we mostly prepare dishes with ingredients that are usually in your pantry and freezer. We do our big shopping once a month and once a week we go to the store to buy fresh produce. That’s why our recipes are so easy to make – we use what’s in the cupboard! Thanks, I won’t mind being either Delia or Dame Mary (with a ‘Paul Hollywood’ next to me).

Yes, chicken is so versatile. When we don’t know what to serve for dinner, we usually make a chicken dish (and it’s never the same)!

Yes, this is an easy recipe, right? But I totally agree, why take away the pleasure now from someone who enjoys making food! That’s why I rather washed the dishes!

We love chicken too. One of my favourite dishes (and easiest) is chicken thighs, quartered red onions and cubed butternut squash with a garlic, olive oil, lemon juice and honey dressing tossed together in a large roasting dish, add six large sprigs of rosemary and slices of lemon and roast for 30-40 minutes. The smell of the rosemary is divine!

Your dish sounds a lot like what we do when we roast chicken and vegetables in the oven. We just do it in separate bowls and with a whole lot of different veggies (and yes, there are always a few sprigs of fresh rosemary in – that smell)! I seldom, if ever, use chicken thighs, preferring the breast, but I know this can sometimes be a bit dry.

We also like chicken breasts. And as you said, because it tends to be dry, we always fill it with something delicious (such as sundried tomatoes and feta cheese). Then it’s nice and juicy.

At first we were afraid that the sweet chilli sauce would make this too sweet, but it gives a unique taste to the dish.

Thanks Leighton. You will notice that our dishes are really not difficult to prepare. And it’s even easier when everything is in the pantry … no unnecessary trips to the shops (which neither of us likes)!
