When we camp, we rarely make pudding. But since we had the ‘vuurvarkie’ (fire piggy) at our disposal (and it was Christmas after all), Berto decided that a baked pudding might just be possible.

Put it on the table:

To give a touch of Christmas to our bread & butter pudding, we decided to use Panettone bread instead of regular bread. The rest of the ingredients are pretty much what you’ll find in any other kitchen.

Ingredients for Panettone Bread & Butter Pudding

250g Classic Panettone, cut into thick slices

200g butter, melted

4 eggs

2 egg yolks

400ml milk

400ml cream

50g caster sugar

For the filling:

Chocolate & Hazelnut spread (or marmalade if you prefer a less sweet option)

If you’re going to cook the pudding in an oven, preheat the oven to 160°C/320°F. In our case, Berto made sure there were enough hot coals underneath, around and on top of the ”vuurvarkie”.

Slice the Panettone into thick slices. Spread with melted butter and then sandwich together with Chocolate and Hazelnut spread (or your choice of filling).

Lay the sandwiches of Panettone in a greased baking tin (or ovenproof dish).

Whisk together the whole eggs, egg yolks, milk, cream and caster sugar in a large mixing bowl.

Whisk ingredients together

Pour some of the egg mixture over the slices of Panettone and let rest for five minutes. Repeat a few more times until all the mixture has been used.

You can now sprinkle a little brown sugar on top (but since we used chocolate spread on the Panettone, we decided it was already sweet enough).

If using an oven, bake the pudding for 25-30 minutes, or until browned on top (but make sure it’s still slightly wobbly).

You can serve the pudding with pouring cream, but it’s just as delicious without it.
