Creamy Chicken Orzo
We love one-pot dishes, but there are two conditions:
- It should be easy to prepare
- And it must be full of flavour
This dish is ideal to make on a weeknight (especially a Monday) when it’s been a hectic start to the new week and no one wants to spend hours in the kitchen getting dinner on the table.
Put it on the table:
This dish’s two main ingredients are chicken and orzo. The rest is really your choice – we usually look at what’s in our fridge and pantry and use what’s available.

Ingredients for Creamy Chicken Orzo
2 chicken breasts, cut into small pieces
1 cup mushrooms, sliced
½ cup whole kernel corn
2 tablespoons sundried tomato, chopped
1 onion, finely diced
4 garlic cloves, finely diced
1 tablespoon tomato paste
1 cup orzo pasta
3 tablespoons grated parmesan cheese (plus extra to serve)
¼ cup cream
1 cup chicken broth/stock
Butter, to fry
Olive oil, to fry
2-3 teaspoons Portuguese chicken spice (or Cajun seasoning for an extra spicy flavour)
Salt & pepper, to taste
As usual, when we use mushrooms in our dishes, we first fry them in a little butter and oil until brown. Remove from the pot and set aside.

Combine chicken pieces, Portuguese chicken spice (or Cajun seasoning) and salt and pepper. Heat the butter and oil in the same pot as the one used for the mushrooms and pan fry the chicken until it starts to colour.

Add the onion and fry for a minute. Add the garlic and fry for another minute.

Add sundried tomatoes and tomato paste and stir to combine. Cook over low heat for five minutes. Remember to stir frequently to prevent burning.

Stir in the orzo, cook for a minute and then add the chicken broth/stock. Bring to the boil and cover the pot. Cook for about 20 minutes over low heat, stirring frequently.
Tip: The orzo absorbs the liquid quite easily, so keep an eye on the pot and add a little extra water if the dish gets too dry.

After 20 minutes, stir in the fried mushrooms and whole kernel corn. Also add the grated parmesan cheese and stir through.

Finally, it’s time to stir in the cream that transforms this dish into the perfect creamy meal it’s supposed to be.

Gently stir in the cream and let it heat up just for a minute or two. Now it’s time to forget about all the stress of the blue Monday while you indulge in this delicious plate of food.

Leftovers will keep in the fridge for a few of days … although I doubt there will be any left over.

The most fun thing about this recipe is that you can add anything to the chicken and orzo – and every time you make it, it’s going to taste different than it did the last time!

Ahh, ek’s bly die poeding was ‘n sukses Una … ek sit met nog ‘n halwe boks Kellogg’s (dis dalk ‘n uitnodiging dat ek weer die poeding moet bak). Hierdie hoender en orzo een pot gereg is heerlik – veral omdat jy letterlik enige iets kan gebruik wat in jou kos kaste en yskas is … en dis soooo vinnig om te maak!

I think it’s a great recipe when a meal is not only quick to make, but also delicious. And yes, I think it’s pretty healthy (well, as healthy as it can be when there’s pasta in there) … but it’s definitely healthier — and tastier — than any take away.

Dit is mos my soort kos die! Eenpot geregte is lekker! Ek maak iets soortgrlyk maar het nog nie die tamatiepasta en Sondroog tamaties daarby gesit nie! Dit klink heerlik!

Ons sit nie altyd die tamatiepasta en songedroogde tamaties by nie, maar hierdie keer was ons lus vir ‘n tamatie basis (dit werk mos altyd goed saam met room). ‘n Ander lekker bestanddeel wat ook hierin werk, is spinasie. Maar soos jy nou self weet, werk enige iets eintlik in hierdie tipe eenpot geregte!

Ha ha, you make me laugh! A quick and easy meal to me is something I can shove in the microwave. It does look like a lovely meal for a blue Monday…if someone else would cook it for me!

Haha, easy for one isn’t necessarily easy for the other, right 😀? Microwave dishes are definitely in the “convenience” category! If you lived near us, we would definitely have made a vegetarian version of this dish for you.

It sounds very tasty Corna. I hadn’t heard of Orzo pasta but discovered that I can buy it from Waitrose. So something else new learnt today!

When we don’t feel like the usual pasta, we use orzo instead … it’s almost like rice, but tastier! Yes, I don’t think one can ever stop learning about what you can cook with, right? I hope you have a lovely weekend – the weather is probably starting to get colder in the UK now. Sunny weather is predicted for our weekend … perfect for camping.

I think this dish falls into the category of “easy to make and everybody will love it”. Especially since you can substitute some of the ingredients if you don’t have everything we’ve added.

Looks delicious, apart from corn which I cannot stomach ha ha. We all need at least one of these dishes that have one or two main ingredients and the rest is what’s available. Anyway, very tasty and easy is recommendation enough to try out this dish.

Haha, I was thinking of you when we added the corn. You can really substitute it for any other vegetable of your choice — spinach, for example, works really well in this dish.

You’re not going to regret making this Hannah — even if you replace some of the ingredients with your favourites. Just keep the chicken, cream and orzo … but the rest is up to you!

It’s really delicious Diane! And it’s nice that we can alternate it with other ingredients every time we make it – but we rarely deviate from the chicken, orzo, and cream!
