You’re probably wondering what’s so great about a veggie stir-fry that we want to share it with you on our blog, right?

What if I told you:

  • It is quick and easy to make.
  • It is one of the most colourful dishes out there.
  • It is healthier than takeout versions.
  • And best of all, it is delicious.

Put it on the table:

Today we are making a vegetarian stir-fry, but of course you can add any meat of your choice. You can also use any vegetables – customize the ingredients according to whatever you have available. Just do yourself a favour and use good quality noodles and top it off with toasted sesame seeds – it does make a difference!

Ingredients for our stir-fry (the pineapple was a late addition)

1 cup mushrooms, sliced

2 cups broccoli florets

1 red onion, sliced

1 big carrot, sliced

½ red pepper, sliced

½ yellow pepper, sliced

3 big baby marrows (zucchinis), sliced

½ pineapple, cut in pieces

avocado oil (to fry)

¼ cup soy sauce

200ml sweet and sour sauce (of your choice)

salt and pepper (to taste)

toasted sesame seeds (for garnish)

Start by browning the mushrooms in a little butter (however, these can also be fried with the rest of the vegetables, but we like the taste of mushrooms fried in butter).

We also pre-cook the broccoli for 3 minutes so that it is not quite as hard when we add it to the other vegetables.

Cook broccoli for 3 minutes and drain well

While the broccoli is cooking, add the sesame seeds to a frying pan and spread them in a thin layer. Fry them for 2-3 minutes over medium heat (swirl the pan every 30 seconds) until they are fragrant and golden brown.

It is a good idea to set the table now because in 10 minutes the food will be ready.

Heat the avocado oil and sauté the onions until slightly soft. Then add the hardest vegetables first, followed by the rest. Sauté for about 3 minutes until the vegetables are almost tender.

Time for the pineapple and then the mushrooms

Add salt and pepper

While the vegetables are frying, cook the noodles according to the instructions on the pack in a separate pot and drain.

Add the pre-cooked broccoli to the rest of the vegetables and stir gently.

Add the cooked noodles. And finally, it’s time for the soy sauce and sweet and sour sauce.

Simmer for about 3 minutes until the veggies are well mixed with the sauce. Spoon the stir-fry into bowls and garnish with the toasted sesame seeds.

Vegetable Stir-Fry

You’ll probably eat your bowl of stir fry as fast as it took you to make it, because it’s just so delicious. So, it’s a good idea to make enough for a second serving!
