Vegetable Stir-Fry
You’re probably wondering what’s so great about a veggie stir-fry that we want to share it with you on our blog, right?
What if I told you:
- It is quick and easy to make.
- It is one of the most colourful dishes out there.
- It is healthier than takeout versions.
- And best of all, it is delicious.
Put it on the table:
Today we are making a vegetarian stir-fry, but of course you can add any meat of your choice. You can also use any vegetables – customize the ingredients according to whatever you have available. Just do yourself a favour and use good quality noodles and top it off with toasted sesame seeds – it does make a difference!


Ingredients for our stir-fry (the pineapple was a late addition)
1 cup mushrooms, sliced
2 cups broccoli florets
1 red onion, sliced
1 big carrot, sliced
½ red pepper, sliced
½ yellow pepper, sliced
3 big baby marrows (zucchinis), sliced
½ pineapple, cut in pieces
Noodles
avocado oil (to fry)
¼ cup soy sauce
200ml sweet and sour sauce (of your choice)
salt and pepper (to taste)
toasted sesame seeds (for garnish)

Colourful sliced vegetables
Start by browning the mushrooms in a little butter (however, these can also be fried with the rest of the vegetables, but we like the taste of mushrooms fried in butter).

Fry mushrooms in butter
We also pre-cook the broccoli for 3 minutes so that it is not quite as hard when we add it to the other vegetables.

Cook broccoli for 3 minutes and drain well
While the broccoli is cooking, add the sesame seeds to a frying pan and spread them in a thin layer. Fry them for 2-3 minutes over medium heat (swirl the pan every 30 seconds) until they are fragrant and golden brown.

Toast the sesame seeds
It is a good idea to set the table now because in 10 minutes the food will be ready.
Heat the avocado oil and sauté the onions until slightly soft. Then add the hardest vegetables first, followed by the rest. Sauté for about 3 minutes until the vegetables are almost tender.

Time for the pineapple and then the mushrooms

Add salt and pepper
While the vegetables are frying, cook the noodles according to the instructions on the pack in a separate pot and drain.

Add the pre-cooked broccoli to the rest of the vegetables and stir gently.

Add the cooked noodles. And finally, it’s time for the soy sauce and sweet and sour sauce.


Add noodles and sauces
Simmer for about 3 minutes until the veggies are well mixed with the sauce. Spoon the stir-fry into bowls and garnish with the toasted sesame seeds.

Vegetable Stir-Fry
You’ll probably eat your bowl of stir fry as fast as it took you to make it, because it’s just so delicious. So, it’s a good idea to make enough for a second serving!

Ha 🙂, “slap-it-together” can work too … my dad used to say as long as he gets food in his stomach, he doesn’t care how it’s made (he was such an easy man to please when it came to food)!

My husband doesn’t like noodles and using rice takes longer (he’s a pain, isn’t he?) but in theory I like it. No pineapple for me though.

My mother is a firm believer in rice with stir-fry. Ha, it’s interesting to see how many people like pineapple on its own, but not at all when served in a dish. This makes me wonder: Do you eat pizza with pineapple as a topping 🙂?

‘n Regte “slap-it-together” een met oorskiet Portugese hoender en kool, wortels,sampioene,rooi uie en soya sous. Daar het niks oorgebly nie! 😀

Yummy! Dis wat so lekker is van stir-fry, jy kan enige iets ingooi en dit bly ‘n lekker ete! Ek’s baie lief vir kool (Berto nie), so as ek my sin kon kry, sou daar ook kool in ons stir-fry gewees het 😀. Dalk moet ons stir-fry ‘n nuwe naam gee: “Slap-it-together”!!

Looks delicious! I’m a big fan of a vegetable stir fry. I’ve never thought to add pineapple to it before. Sounds like it would add an interesting flavour.

It’s interesting to read how many people don’t like pineapple in a dish (like Jo here in the comments). But we love the sweet and tangy taste of a pineapple – either on its own, in salads or in hot dishes. If you like this, you’ll love pineapple in stir-fries!

Looks delicious, Corna! One of the great things about stir-fries is they’re so versatile. I like the idea of cooking the mushrooms in butter though, I think that would add a nice richness.

I think if anyone opens their fridge, they will find that there will be enough ingredients in to make a delicious stir-fry! Like you said, it’s so versatile. Yes, the butter definitely gives a uniquely rich flavour to the mushrooms – I can eat it right there even before it goes back into the stir-fry!

Stir fry dishes are so quick to make. We usually have one a week, with noodles or egg fried rice. Chicken, salmon or beef strips are our choice of protein, I have tried various types of tofu but can’t say I have found one I like.

Quick to make … I think that’s why it’s such a favourite! When we use meat in our stir-fry, it’s usually chicken. And tofu? Never tried that in stir-fries – in fact, I’ve never eaten it.

Oh that looks really good! Another one for that cook book. This will make you laugh…my eyes scanned the list of ingredients and I thought “Marshmallows? That’s novel!” Brain has trouble assimilating the visual sometimes!

You’re right, I had a good laugh at marshmallows 😁! I know that a lot of ingredients will work in a stir-fry, but I’m not so sure about marshmallows. And now I want to go to the shop to buy marshmallows … that’s how my brain works!

Another tasty dish. haven’t used pineapple in a stir-fry before but like the fruit so will add some next time. Interesting that you call courgettes baby marrows. I learn something new each day! Also I’ve never served up just a vegetable stir-fry and always added meat so this is another good idea Corna.

I wondered for a long time what the difference was between courgettes and baby marrows (until I found out it was one and the same thing)! Adding pineapple in dishes is definitely not a favourite with everyone, but we love it. And usually there’s meat (especially chicken) in our stir-fries, but sometimes it’s nice to go all vegetarian and it’s just as delicious! Have a wonderful weekend Marion 🙂.

Looks amazing and I love stir fries but I’m not sure about the pineapple. I think of pineapple in a Sweet and Sour dish but whatever works. 😉

Ha, it seems to me there are quite a few people who aren’t so keen on the pineapple in stir-fries … and here I thought it’s “normal” to add pineapple 🙂!

That is so colorful and all that flavor. Gosh I wish I liked peppers, however, I would definitely eat this without the peppers. I love everything else in there especially soy sauce and sweet & sour sauce.

I think it’s all the colours in this stir-fry that can’t make one stop eating until there’s nothing left! I never ate peppers until I met Berto and it took time to like them (but now I can’t believe I never wanted to eat them)!
