Yellow Sands Riverside Brunch
You’re about to see how one makes the fastest brunch ever while camping. We recently went camping at Yellow Sands for a second time – this time at the riverside (more on this in a future post). After taking a stroll along the river and sea, we returned to our camp site very hungry.

We dug through our camping boxes and fridge to see what was available to make a quick brunch. It’s always good to have some canned food when you go camping because this will satisfy any hungry camper in no time!
Put it on the table:
So, this is a dish we made from what we had at our disposal and from now on it will be known as ‘Yellow Sands Riverside Brunch’.

Ingredients
1 can (410g) baked beans in tomato sauce
1 can (300g) corned meat/bully beef, diced
250g diced bacon
1 potato, diced and cooked
1 onion, diced
olive oil
salt & pepper
Peel the potato and cut it into cubes. Then cook it until slightly soft. Drain and set aside.

Things happen fast from here! Heat a little olive oil in a pan and fry the onions until soft.

When the onion is soft, add the diced bacon and fry until the bacon begins to brown.

The corned meat is next; stir it gently in and let it cook for a minute. Then add the boiled potato.

Finally, it’s time for the can of baked beans in tomato sauce. Season with salt and pepper and stir gently. Give the dish about 2 minutes to warm up.

It may be hard to believe, but this was one of the tastiest brunches ever!

Between the two of us we emptied the pan. All that was left to do was to make a cup of coffee/tea and sit back in our camping chairs while we enjoyed the view of the river.

Thanks Carl. I think Bully Beef is very underrated in the kitchen. For us, it’s a delicious go-to when we’re hungry and don’t want to put a big effort into cooking!

I love these quick recipes (if one can call this dish a recipe, because we literally just threw together what we had in our camp boxes 🙂). But you’re right, the setting definitely contributed to how much I enjoyed this brunch!

Corna, hierdie is ñ dis so na my hart! Ek is mal oor bully beaf, so saam met aartappels en die boontjies kan ek glo dis ñ treffer. Weet jy wat, ons vat gereeld gaste op die boot grootsee toe om te gaan brunch. Gewoonlik doen ons boerewors rolle, ons braai die wors op die strand. En roereiers. Maar hierdie resep saam met die Portugese pao-brood gaan ñ hengse wenner wees!👏👏👏🤗

Oee, ek weet nie of my maag hierdie brunch op die grootsee sal maak nie – ek kry mos so effe “motion sickness” (dan is dit net suurlemoen water en gemmer koekies vir my) 😁. Maar ek sal daar op julle mooi strand by die lagoon wag vir die Portugese pao-brood!

Sometimes the simplest things are the most enjoyable especially if you have worked up a healthy appetite with a good walk. Your images of the process make it so easy to follow. Now I’m hungry again!

My mum always says that “hunger is the best cook”! And this is very true. But I can also add that when you eat something simple and you are surrounded by nature’s beauty, any food will taste good!

The corned beef dish looks very tasty. I quite like an occasional corned beef sandwich and buy slices from the supermarket deli counter. I haven’t tried a tin before but it sounds a good alternative especially for a cooked dish.

When we were kids, my parents always bought cans of corned beef, because our small town was far from the bigger cities where one could buy fresh produce. And that’s how I got to know (and still eat) corned beef.

Oh yes, that heavy pan is a winner in our camp box. We also have one in our kitchen here at home (and another one at our permanent home in Langebaan). I guess you can say we love our heavy pans 🙂!

Looks like a beautiful spot to camp. It’s funny how sometimes it’s the spontaneous and random meals with whatever you have that taste the best.

I think this might be our favourite camping spot so far — it was a little more secluded, something we like. Yes, I was surprised with how delicious this dish was – now it’s probably going to become a regular on our camp weekends!

Thanks Leighton, I’m glad you like the name. I tried to think of another name, but my creativity failed me 😉! I think one of the best things about camping is that it tests your cooking ability. Although there is nothing wrong with making a sandwich, it is nevertheless nice to have a tasty plate of food in front of you when you are out in nature.
