French toast with crispy bacon & caramelised banana
We are back with another favourite camp breakfast. There are so many different toppings for French toast and when we camp, we use whatever we have available.
Put it on the table:
When we go camping, there is usually bacon in the fridge and fruit on our camp table. So, it wasn’t hard to decide what to put on top of our French toast.

Ingredients
4 slices of bread
3 eggs
250g streaky bacon
2 bananas
salt & pepper
We prepared the breakfast on our camping stove, but inside the ‘braai’ … that’s how you do it when you’re camping, right?
Everything happens very quickly during this breakfast, so make sure you have everything ready and on hand. First, the bacon is cooked in a little water in the cast iron pan and then fried until it is crispy.

After the banana has been cut into thick pieces, we quickly fry it in a little butter in the pan until it has caramelised.

I assume that most of you know how to make French toast. After I beat the eggs and add salt and pepper to taste, the slices of bread are dipped in the egg and then fried in the pan (with a little melted butter) until the egg is cooked.

All that’s left now is to put the bacon and caramelised banana on top of the French toast. Then we can enjoy a delicious breakfast while sitting next to our tent on the shores of the Inchara Lagoon at Morgan Bay.

French toast and bacon are definitely great friends! And you know how I always say that bacon makes everything better … and yes, that view was the icing on the cake (or, in this case, the bacon on the toast 🙂).

Some American friends introduced me to French toast when I was about 10 and after that it was the only thing I wanted for breakfast though my mother always hoped I would settle for cereal. When I saw the photograph I thought maybe those were plantains, but I’m not sure you have them in South Africa. They look just like bananas but they are less soft and sweet although they make a good vegetable dish. I could eat bananas in any form and those look delicious. With the accompanying view..perfect!

My mom always made French toast for breakfast for my brother and me on weekends – we liked it so much that later she even had to make it on a Sunday night too (still weekend we said)! As far as I know, plantains are imported to South Africa (but we have never bought them). Yes, along with that view, most dishes are a feast!

Yes, I wouldn’t have put it together on French toast as well, but as you know … I have a creative husband when it comes to food 😁. And oddly enough, it works very well together!

I always thought French toast came from France, but apparently it was invented long before France even existed (the first known recipe for French toast came from Rome around 300 AD and was known as “Roman Bread”). Well, there’s now a bit of history for you about a delicious breakfast 😋.

Yes, yes, yes, this is a winner. I’ll keep it behind my ear. Incidentally, I recently had a bacon sandwich for the first time in well… perhaps a year…. and it was heavenly.

So yummy. I like French toast but have never tried frying bananas but will have a go now. Sometimes for a quick lunch snack with simply have sliced banana in buttered baps. I love them!

Bacon on its own and banana on its own are delicious … now, just imagine how delicious the two are together in one bite! Your quick lunch snack sounds really good too!

It’s an odd combination, but works well together. I mentioned to someone here earlier that I don’t like warm banana, but I love this on French toast. I guess, one should try everything, you just never know how much you might like something!
