Green beans with toasted almonds
This recipe is quick, healthy and delicious! Green beans with toasted almonds are a great side dish for chicken, turkey and ribs, but also go well with salmon.
If you don’t like green beans, I can promise you, once you’ve tasted this version, you won’t want to eat them any other way again.
Put it on the table:
As expected, there are few ingredients and the dish is literally prepared in just 15 minutes.

Ingredients
250g fresh green beans
½ cup flaked almonds
1 lemon
2 tablespoons butter
salt & pepper
Top and tail the green beans and rinse them in cold water. Halve the green beans if they are very long.

Trimmed fresh green beans
Bring the water to a boil in a pot on the stove to which a pinch of salt has been added. When the water starts to boil, add the green beans. Let it boil for about 5-7 minutes (it shouldn’t be mushy, but still nice and firm). Remove from the pot and strain them through a colander.

Cook the green beans
You can of course buy toasted almonds in the store – raw almonds can be a little bland. But if you only have raw almonds (like we did), put them in a pan and toast them dry by moving the pan from side to side until the almonds are golden brown. Put them aside.


Toasting the almonds
Melt the butter in the pan and add the cooked green beans. Add salt and pepper and stir-fry it for a minute.

Cooked green beans back in the pan
Scatter the toasted almonds over the green beans and add the juice of the lemon. (You can also add some of the pulp of the lemon for extra flavour).


Add toasted almonds and lemon juice
When the green beans are hot, they are ready to be served. You can even be daring and drizzle some balsamic glaze over.

The crunch of the almonds works surprisingly good with the green beans … with the roasted chicken it was a real winner.

I’ve made a similar dish with toasted hazelnuts which is also good, but I haven’t added lemon. I’ll try that next time, it sounds like a nice touch. Thanks Corna!

I think one can definitely alternate this dish with different nuts (we’ve made it with pecans too and it’s been really nice – next time we’re going to use hazelnuts, thanks Tricia).

I don’t know how to cook salmon either. I recently ate it in a restaurant (along with green beans and almonds) and it was very tasty. There seems to be a fine balance of not overcooking salmon …

Yes, I’ve tried it in tinfoil in the oven and just panfried but I can never get it to have much flavour 🤔💙

Oven bake for 20 mins (can be wrapped in foil) or pan fry for about 10 mins if salmon portions.

Haha, not fished around here, I suspect most comes from abroad, though there is Scottish farmed salmon. We love salmon 😋

We also like salmon. But because we struggle to cook it properly, we only eat it when we eat out (which is not a lot). And it’s quite expensive too …

We love green beans. Never tried them this way though. Nice cold too in a Nicoise salad with sea bass.

Green beans, new potatoes, hard boiled eggs, red onion and olives. We don’t bother with lettuce. Tinned tuna, tuna steaks or what we like is pan fried sea bass fillets.

This is basically my usual green bean recipe plus almonds. Next time I make them, I’ll try adding some almonds!

I can’t remember the last time I ate beans! Mum used to get such nice ones from the market and latterly she grew her own. She had a way of slicing them perfectly without even having to look. She added sodium bicarbonate to the water which turned them an appetising shade of green. With a dollop of butter they were divine. Maybe we should give our local beans a try. Since Grant’s diagnosis we are exploring new options!

My dad always used to cut the green beans for my mom whenever she made bottled curry green beans — he was really good at it, too. And you’re right Carolyn, my grandmother also made green beans with butter and we loved it. Green beans are on the ‘green list’ for diabetics, so maybe you guys should give it a try.

Oh yes, I think one’s own vegetables you grow taste even better! My dad used to had his own green bean patch and we had this veggie in all forms when he harvested them!

Having enough space for some veggie patches and fruit trees was a big factor in us choosing the land to build our house here on the Mornington Peninsula 12 years ago. And yes the fruit and veggies do taste good! Cheers

I’m sometimes so surprised at how delicious such simple recipes are! And green beans are a big favourite in our house – we make this dish at least once a week during summer.
