Birthday Lemon Cake
When it’s my birthday, it’s the perfect time to bake a cake without feeling guilty about the extra calories!
Because it’s very hot (and I didn’t really want to spend a lot of time in front of the stove), I resorted to my favourite cake recipe – delicious and spongy lemon cake. Itβs so easy to make that even a novice cook can master this recipe.
Put it on the table:
There are only a few ingredients needed to make this delicious cake – you probably have it all in your pantry.

Ingredients for the easiest cake ever
Cake Ingredients:
250 g soft butter or margarine
500 ml (2 cups) castor sugar
5 ml (1 teaspoon) grated lemon zest
6 eggs (room temperature)
625 ml (2Β½ cups) cake flour
15 ml (3 teaspoons) baking powder
250 ml (1 cup) sour cream
Just follow these easy steps and you are guaranteed a delicious cake.
- Place the butter, sugar and lemon zest in a bowl and mix it well until light and creamy.

- Beat in the eggs one at a time, beating well after each egg.

- Now it’s time for the dry ingredients. Sift the flour and baking powder together and fold them into the mixture.

- Finally, it’s time to add the sour cream and then gently fold in until just combined.

It was at this time that I looked for my round cake pan – only to discover that it was still at our house in Langebaan. But Plan B worked well and a round cake now suddenly became a square cake. Grease your pan (or glass bowl in my case) thoroughly with margarine/oil and spoon your batter into it.

Place the cake batter in a preheated oven of 180Β°C/356Β°F and bake for about 1 hour or until done.
Let the cake cool in the pan before turning it out on a wire rack. This was the hardest part for me as I had to get the cake out of the glass bowl … but wonder of wonders, everything ended well!

This cake can either be decorated with the icing or icing sugar can just be sifted over the top. But it is my birthday after all, so the occasion called for a little extra effort.

Icing ingredients
Icing Ingredients:
100 g (100 ml) soft butter or margarine
500 g (2 cups) icing sugar
Lemon juice or milk (I used lemon juice)
Beat the butter until it’s soft (and if you do it like me, you’ll have to wipe chunks of butter off the kitchen wall later)!

Butter (most of the 100 g) whipped until soft
Add the icing sugar and beat well until well combined and spreadable. Add a little lemon juice (or milk) to soften icing.

Icing ready for the cake
Spread over the cake and make it smooth (or not – as in my case). I topped it off with a handful of pink ‘angel drops’.

And how does one enjoy cake? Of course, with a cup of tea or coffee. But when celebrating a birthday, it calls for a glass of sparkling wine!

For me, lemon is a great taste, and one applicable in all courses. I’m all in for the lemon cake and a bit of bubbly. I may follow it up with some limoncello. π

That a way!!! Fortunately, I also have some available (at home) because I make my own … but not always lemon. Current stock is orange-vanilla.

I’m quite fond of a lemon drizzle cake or lemon polenta cake. Somehow eating cake with lemon (or orange) doesn’t make me feel so guilty π I do find your measurements confusing though as ml and cup are American, not English weights. So is ml the same as grams?

That’s exactly how I feel Jude β the lemon takes away most of the sweet taste (so, I imagine two pieces of cake aren’t such a big sin)! Now, regarding the measurements in ml and cups: The recipes in SA always show that one cup equals 250ml. Milliliters and grams aren’t quite the same though. But still, when it comes to liquids, 250ml and 250g are the same (but not solids, such as flour). Oh my, now even I’m confused. I’m not really helping, sorry.
Yes, we’re back in the Eastern Cape where it is hot and humid with thunder showers almost every day! Thank you very much, it was a lovely day (which we ended with a “braai” – my perfect day).

First of all Happy Birthday! (It’s my brother’s birthday. Thanks for reminding me!) Your cake looks good. Lemon cake was one of my favourites. Aunty Kay made a lovely one. When we were kids, my mom would always bake me lemon cake or lemon meringue pie and my brother got chocolate cake … and 50+ years later, that’s still what we prefer on our respective birthdays! Nothing wrong with store bought chocolate β in fact, Berto, along with a bunch of flowers, brought me the most delicious chocolate truffles for my birthday!

Oh, happy (belated) birthday to you too Morag! I remember, as a child, it wasn’t fun to have a birthday so early in January because within a few weeks I was getting Christmas and birthday presents and then it was a long wait before I could get presents again! But you’re right, I love celebrating my birthday in the summer … as a kid, I could always have the most fun parties! My mother also baked me a lemon cake on my birthday since I can remember and it’s still my favourite today!

Yes you are right my presents often became one present. I had quite a shock the first year when celebrated my birthday here Scotland. It was icey cold winter. It felt so foreign. Lemon cake is also still my favorite. It’s a lovely gentle tang. ππππ

Suurlemoen skuim …? Ek wil meer van die resep hoor! Ek het suurlemoen ysies in ons vrieskas (dit werk goed vir die warm en bedompige dae hier in Oos-Londen) … en dit laat altyd ‘n heerlike vars smaak agter in my mond (ek glo dus dit gaan vir Rots help).

Dis mos altyd lekker om ander mense se resepte te probeer – ek’s seker ek sal net so baie van joune ook hou! Hierdie koek is soos my ma dit al die jare vir my verjaarsdag gebak het … dit was so lekker om dit sommer hierdie keer self vir my verjaardag te bak!
