It’s no secret that we love chicken dishes – we enjoy these at least once a week. And when we feel like chicken and vegetables with a delicious sauce, there’s always this recipe that Berto likes to make.

Here are the ingredients for this recipe (and make enough for the next day too, because you’ll love it).

Ingredients for the chicken dish

6 chicken thighs

2 onions, chopped

2 potatoes, cut into large pieces (we love potatoes, so we added 2 more)

2 carrots, cut into thick rings

4 cloves of garlic, chopped

bunch of fresh parsley, chopped

salt & pepper

2 teaspoons dried oregano

2 teaspoons sweet paprika

The sauce:

100ml sweet chilli sauce

30ml soy sauce

3 tablespoons honey

3 tablespoons Dijon mustard

juice of ½ lemon

Sauce ingredients (we swapped the bottle of lemon juice for a fresh lemon)

Season the chicken thighs with salt, pepper, oregano and sweet paprika. Flip them over and repeat on the other side. Massage the spices well into the chicken – it should cover the whole piece.

Heat a little oil and butter together in a pot on the stove and fry the chicken over medium heat until golden brown (about 5 – 7 minutes on each side). Transfer the chicken to a plate.

Now, fry the chopped onion in the same oil. After a few minutes, add the carrots and fry them together for about 5 minutes.

Finally, add the potato pieces, garlic and parsley. Also add a little water and put the lid on so that the potatoes can steam slightly.

While the vegetables cook a little softer, you can make the sauce. And it’s very easy – just add all the sauce ingredients in a pot, stir well and cook for about 5 minutes.

Now it’s time to put everything together. We used our *‘braaibak’ once again. Put the veggies in first and then add the chicken pieces on top. Finish it off with the sauce. Place it (uncovered) in the oven for 40 minutes at 180°C / 360°F.

  • Note: A ‘braaibak’ is a ‘casserole’ we use when we ‘braai’/barbecue. This ‘bak’ is quite large and can go either outside on the fire or in the oven – a very handy kitchen item.
